Many people outside the dietetics profession believe that eating healthy means giving up the foods they love, including dessert. As we know, there are no “good” or “bad” foods and everything can be enjoyed in moderation. Indulging in dessert is possible while sticking to a healthy eating plan. The key is to enjoy a treat not overloaded with empty calories. One of my favorite “go to” desserts is Chocolate Silk Pie. This healthier version of chocolate pie is easy, fast, vegan and above all delicious! I have made this dessert for holidays, and parties;  even for Internship Orientation. The secret to making this decadent chocolate pie lighter? Tofu! For all those out there who doubt the idea of using tofu in a chocolate pie recipe, one bite and you will wonder why you never tried it before. This pie is so chocolatey, decadent and satisfying,  no one will ever guess the main ingredient is tofu! This dessert is lower in calories, has protein, fiber, no cholesterol and is gluten, dairy and nut free. Feel good about dessert again!

Guilt Free, Allergy Friendly Dessert
Recipe:  Serves 8
  1.  Mi Del Gluten Free graham cracker pie crust (or you can make your own)
  2. 1 bag Enjoy Life Chocolate chips (semi sweet or dark chocolate)
  3. 1 package silken tofu
  4. 1 teaspoon vanilla extract
  5. ¼ cup soy milk
  6. 1 teaspoon instant espresso power or instant coffee
Directions:
1. Place chocolate chips in a microwave safe bowl and heat for 1 minute. Stir. Continue to then heat at 30 second intervals, stirring after each heating, until chocolate is melted. Set aside and slightly cool.
2. Place tofu, soy milk, vanilla and instant espresso powder in a blender or food processor and process until smooth.
3. Once tofu mixture is smooth start blender on low and remove the cap on the blender lid while it is on. Slowly pour the slightly cooled chocolate into the tofu and blend until combined.
4.Pour mixture into the pie shell, top with chocolate shavings if desired and chill for several hours or until set. (if you are in a hurry place pie in the freezer for 30 minutes, then transfer to the fridge before serving)

Nutrition Information:
221 calories, 13 gm fat, 3 gm fiber, 24 gm carbohydrate, 3 gm protein, 13 mg sodium
