Sierra Herb - Allentown Campus

Hi all!
 
My name is Sierra Herb, Sodexo dietetic intern with the Allentown Campus, and my most enjoyable rotation has been my wellness concentration. I interned with Susan Hurd, Sodexo campus dietitian at several university and school accounts, working with students and staff members to promote nutrition and wellness in the school setting.
 
One huge concern with many students in regard to campus dining is making sure that their dietary needs are being met, especially those with medical needs. Sodexo accounts take special care to accommodate students who have food allergies or celiac disease and work hard to ensure they have a safe and enjoyable dining experience. Working with Sue, I have been able to conduct food allergy audits, provide education, create written material, and participate in counseling students who have special dietary concerns. As someone with a food allergy myself, I am passionate about advocating for a greater awareness of food allergies and promoting allergen-free recipes that are served in a safe and exclusive area for students. With prevalence rates of food allergies steadily increasing, it is important for dietitians to understand and be able to work with allergic clients; we must take mindful precautions when we create and share recipes, read labels, and provide nutrition counseling and advice.

During this rotation, I also had the pleasure of working with a dietitian at ShopRite of Hatfield, where I assisted with in-store demos, cooking classes, weight loss classes, store tours, counseling, and community wellness presentations. I’ve noticed areas in which I have grown while working in the community setting such as development of educational material, thinking creatively, communicating clearly and accurately, and public speaking. Working with and teaching a diverse group of people of all ages and backgrounds was something I appreciated and valued, as this is a skill that will always be utilized in any work setting. 

Targeting the community and practicing preventative healthcare techniques such as intuitive healthy eating and staying active is something I am passionate about and have loved being a part of during the many different rotations of my dietetic internship. I am looking forward to graduation and seeing where I will go and what I will do with the education that has been provided to me!
