
My name is Olibel Morales. I am currently interning with Sodexo Dietetic Internships' New York Campus at Newark-Beth Israel Hospital. I am fortunate to be taking advantage of the opportunity this internship gives us to complete our master's degree in dietetics with the University of Rhode Island and am proud to be completing my first semester.
At Newark-Beth Israel, I feel extremely lucky to be surrounded by an incredible group of Registered Dietitians who are knowledgeable, supportive, and encouraging. As I have progressed through this internship, I have become more and more capable in my interactions with patients, knowledge of various diseases, and recognizing the complexities in each individual patient. I feel the internship has boosted my confidence in myself and established a strong base of knowledge and understanding for my future career endeavors.
My experience has been challenging and rewarding in ways I have never imagined. One of my favorite rotations so far has been Oncology. I remember being a young child accompanying my father to the hospital when he was sick with pancreatic cancer, and doing that rotation gave me a great insight into his experience at that time. I saw how a dietitian can really help oncology patients by remedying their sub-optimal intake and appetite issues. It was very empowering and something that I am interested in pursuing in the future.
For my culinary concentration, I am eager to complete my community hours. So far, I have volunteered during healthy cooking classes at the hospital’s health and wellness center. In the future, I will create and conduct my own healthy cooking classes, something that I have experience with as a former demo chef assistant at a non-profit in the Bronx. I look forward to that and to discovering new possibilities in my remaining time as a Sodexo Dietetic intern!
