Norah Otieno-Wasonga - Region 10

​My name is Norah Otieno-Wasonga, and I am a region 10  intern based in the Webster, Texas area.
 
I completed both my clinical and foodservice management rotations in two (2) HCA Houston Healthcare hospitals and was fortunate to complete both rotations at the sites during the COVID-19 pandemic. This was an unfortunate and much different experience than I had anticipated, but it was fulfilling.  I then completed my concentration in senior living at Benchmark Senior Living in Lincoln MA. I am currently working on my last rotation, which is community. I have learned so much thus far in all of the rotations and have had unique experiences in each due to COVID 19.
 
The rotation I want to highlight is community. During my rotation in community, I experienced finding challenging ways to complete most of the rotation virtually. I’ve had limited opportunities of in-person experiences, but most of the rotation will be completed, virtually.

As of now, I’ve completed all my community education for the various age groups virtually. At first, I wasn’t sure how this was going to be possible, but after talking with some of the interns in my region, I was able to come up with educational activities for the specific targeted audience and all the presentations went well. I had to speak with the participants ahead of time and email them handouts and recipes for some of the cooking activities. For the children’s education, the parents were able to provide me with ideas of what to focus on, since eating fruits and vegetables is a challenge for the children.  I provided education on how to include more fruits/vegetables and parents were able to provide various ingredients for smoothies and dips to eat with the vegetables and fruits.  I have also been working with Cordialis Msora-Kasago, MA, RD on a project for African Pot Nutrition where I’m tasked with reviewing and updating articles.

I’ve had plenty of support from my internship director and Sodexo, who ensured that I still had all the tools needed to succeed in the internship, regardless of the circumstances.
I look forward to graduating soon and sitting for the RD exam and becoming an RD. ​​
