Hi Everyone. My name is Nathalia Ortiz and I am a Sodexo dietetic intern at the New York Campus. As I wrap up my clinical rotations and begin my culinary concentration next week, I am looking forward to creating different, healthy recipes and providing cooking demos. Being a full-time dietetic intern while completing my master’s degree is no easy task, and it requires a lot of time management. Given this challenge, my favorite on-the-go breakfast is my ‘famous’ quinoa egg muffins. I typically make them over the weekend and store them in the fridge. In the morning, all I have to do is heat them up in the microwave. These protein-packed quinoa bites are a great way to start the day and my recipe is provided below.
