Hi Everyone.  My name is Nathalia Ortiz and I am a Sodexo dietetic intern at the New York Campus.  As I wrap up my clinical rotations and begin my culinary concentration next week, I am looking forward to creating different, healthy recipes and providing cooking demos.  Being a full-time dietetic intern while completing my master’s degree is no easy task, and it requires a lot of time management.  Given this challenge, my favorite on-the-go breakfast is my ‘famous’ quinoa egg muffins. I typically make them over the weekend and store them in the fridge.  In the morning, all I have to do is heat them up in the microwave.  These protein-packed quinoa bites are a great way to start the day and my recipe is provided below.  For more healthy recipes, visit my blog www.earthnutrifit.com or follow the blog on Instagram @earthnutrifit.
Quinoa Egg Muffins
Quick and easy quinoa egg muffins are so versatile and make a nutritious breakfast or snack!

Servings 10 Servings

Ingredients
·       1 cup cooked quinoa
·       2 eggs, beaten
·       1/2 cup tomatoes, diced
·       1/2 cup peppers, diced
·       1/4 cup cheese of choice
·       Salt and pepper to taste
·       Chopped spinach, mushrooms, onions, carrots, or other preferred ingredients (optional)

Directions
1.    Preheat oven to 350°F.
2.    Mix all ingredients together and divide the mix evenly into a greased muffin tin
3.    Bake for about 20-30 minutes.
