
During my time in my culinary rotation, I have had the privilege of working with several talented chefs. I am currently completing my culinary rotation at PPL in Allentown, PA which is a utility company and one of Sodexo’s corporate sites. I work closely with the kitchen to utilize Sodexo’s recipes, implement special events for the kitchen, and work toward optimal client satisfaction. One of the events I have spearheaded at my corporate site is Wellness Wednesdays. On each Wednesday in May, I work at the action station to produce healthy springtime meals for all of the employees at PPL.
I chose some of the recipes for my Wellness Wednesday Presentations from Sodexo’s Mindful database and then developed some of my own with my preceptor. I created marketing materials to let the customers know what will be coming during the month of May. The recipes include a low sodium turkey avocado wrap, gluten-free chicken Parmesan, a gyro station, chipotle portobello burgers, and fiesta burrito bowls. Thus far, this project has been extremely well received by the clientele at PPL. The customers are excited about all of the upcoming dishes and have had several compliments for me, not only on the Wellness Wednesday dishes, but also on my Retail and Wellness theme meal that was completed in my food service management rotation.
I really enjoy interacting with the customers during my Wellness Wednesday presentations (and during my everyday experiences in the PPL café). I have found that it is much easier to provide nutrition education while talking with customers about an actual dish rather than just providing education on its own. The customers love to hear about what is going into their food and how it is benefiting them. I am so fortunate that I have found a way to combine my nutrition knowledge with my love of cooking to help others succeed with their health and nutrition goals!
