
Hello everyone! My name is Megan Devlin. I am a Sodexo Dietetic Intern from region 1 (New England). I have just completed my second week in my food service management rotation at Curry College in Milton, Massachusetts. I have had the pleasure of working with Curry College’s executive chef, Christian King. Along with Karen Jew, RDN, and Keith Meal, general manager. I have really enjoyed my time at Curry College so far! Chef Christian, a graduate from Johnson & Wales, has worked in many food service operations and is an expert in the field. In the first week, I focused on the basics. I learned the kitchen, equipment, worked on knife skills, and learned the different stations. In the second week, I worked with Chef Christian to develop plant-forward entrees to add to the menu. I found a falafel recipe that we altered slightly by substituting freshly ground oat flour instead of white flour. We then pan seared them on the flat top and served with lettuce, tomato, pita, and tzatziki sauce.

I also completed a cooking demonstration. I made a cauliflower fried-rice with tofu, cashews, peas, and carrots along with a dairy-free dark chocolate pudding made from silken tofu. This was my first time using a wok. It was exciting to learn a new piece of cooking equipment. Both the cauliflower fried-rice and chocolate pudding were very popular! The chocolate pudding sold out faster than we initially expected and they might include the cauliflower fried-rice as part of their rotating menu. I am currently planning a second cooking demonstration to take place in the middle of October in collaboration with their “Wellness Wednesdays” events.
In addition to working in the kitchen, I had the opportunity to be part of their Wellness Council meeting. The Wellness Council is an interdisciplinary organization that meets to plan wellness events, discuss topics affecting Curry College students, and addressed ways to better meet the wellness needs of college students.
I am still just getting started in my food service management rotation. I am excited to continue to learn and grow from this experience.
