
I have been fortunate enough to complete my food service rotation at The College of New Jersey alongside their Campus Services Registered Dietitian, Aliz Holzmann, RD. In addition to gaining insight of a large-scale food service operation and working with an incredible campus dining staff, I have been able to help with the planning of their upscale dining event for the month of April.
This month’s theme meal was titled “A Taste of New Jersey” and celebrated NJ’s history, natives, and of course culinary traditions! The event highlighted some of the state’s famous foods including blueberries, pork roll, corn, cannolis, corn, salt water taffy, peaches, tomatoes, and pizza. Dinning services aimed to incorporate not only Jersey foods, but to highlight the state’s history and natives through creative names like the Springsteen Sushi Roll and the Jersey “Devil” Egg Salad Sandwich. The event also gave students a chance to voice their opinions on some infamous statewide controversies such as the pork roll vs. Taylor Ham debate and the existence of central NJ.
This theme meal also provided an opportunity for nutrition education focused on the benefits of eating in season and locally. Our education material highlighted in-season produce for spring, as well as their benefits, which include adding variety to your diet, maintaining optimum flavor, and providing more nutrients than other produce options. Not only was this a fun event for students and staff, but it allowed us to promote eating locally just in time for Earth Day!
