
The campaign for Meatless Mondays began back in 2003. The movement swept the nation and eventually moved overseas in 2009. It is currently in 44 different nations and continues to grow.
I recently introduced this campaign to the students at Bethel College in St. Paul, Minnesota, where I am currently doing my health and wellness concentration. It started with a simple sampling of such meatless options as a veggie burgers and egg salad. As they happily munched on the free samples, I gave them a handout highlighting the reasons why going meatless one day a week was beneficial. It included such things as: it was better for their health, they were helping the environment and more times than not vegetarian options were also cheaper options. I also pressed them to join the bandwagon and try to go meatless one day a week.
Signs have been strategically placed at each of the 3 onsite dining establishments as a reminder to go “Meatless on Mondays” and it also includes a list of the vegetarian options served at each of these locations for ease and convenience.
We’ll see as time goes on, who decides to make the switch!
