When I think of good nutrition, things like heavy cream, butter and cheese don’t often come to mind. However, these past few days at CHOP, I’ve learned about how these foods are actually used as medical therapy for a certain group of kids. Children with seizure disorders such as epilepsy sometimes do not respond to conventional pharmaceutical therapy. This is where that heavy cream comes in! The ketogenic diet has been around for almost 100 years and it involves eating a very high fat diet. This allows the body to use ketones for energy, which results in a decrease in seizures. Today, we taught families how to prepare Ketogenic recipes. On today’s menu – broccoli and cheese soufflé and strawberry cream cheese mousse! Here’s a photo of all the carefully weighed out ingredients. In order to create a perfect 4:1 ketogenic ratio (fats:carbs + protein), ingredients must be weighed out to the ounce.
