
Hello, my name is Darlene Regueiro. I'm currently completing my internship with the NY campus. It feels like I just started my basic clinical rotation at SUNY Downstate, but I actually only have a few more days to go. Basic clinical consists of cardiovascular, diabetes, and GI disorders. At SUNY Downstate, I’m getting to observe a lot of RDs and their different styles of practice. I'm fluent in Spanish, so there are days where I get to conduct nutrition assessments on my own. This hospital is very diverse and dense in a Latin/Hispanic population, so I feel appreciated by the patients since they get the attention they need with my help.
Before starting my internship, I was most excited for the clinical portion. However, I started my internship with food service management and completely fell in love with managing and leadership. I'm glad I had this experience early on, because I am now much more open to the other rotations and concentrations. I will actually be doing my concentration in leadership!
I did my foodservice rotation at a law firm in NYC where they had a subsidized cafe for the attorneys and their staff. During my time at the cafe, I got to develop recipes with the help of an executive chef. It was a lot of fun, but especially rewarding to see my recipes go up on a menu. I felt like I truly left my mark there. I've included a picture of the new toasts I helped develop for the toast bar that will be up for sale for five whole weeks!
You can say I'm a bit indecisive, but with an RD credential there is so much to do. Every day I
am falling more in love with my profession and the many avenues I can take with it.
