​Hello, this is Dan Bucci Sodexo Dietetic Intern performing a food demo at the Benjamin Moore Headquarters in Montvale, New Jersey. I made 2 varieties of homemade rice pudding for the clients. One was fat free and the other was low fat (2% milk). I asked the clients to assess the products for taste, appearance, consistency and overall acceptance. I was pleased to hear that they enjoyed the product and ultimately enjoyed the 2%-low fat rice pudding recipe the best.

Make sure you take your time with this recipe. If you forget to stir, it will burn to the pan so make sure you are actively watching it. Below are the nutrition labels for this refreshing dessert. Making rice pudding from scratch can be easy. You need, milk (of your choice), arborio rice, sugar and vanilla. Heat up your pot with milk, dissolve the sugar, add the rice and vanilla, then be patient. Keep the heat at a constant temperature where the milk is lightly simmering. Do not use a lid to ensure that some of the milk is evaporating off to help condense the rice and milk mixture. Don’t forget to stir frequently to prevent the rice from sticking to the bottom of the pan. After about an an hour and ten minutes your rice pudding should be nice and thick. Place in the freezer or blast chiller to bring down to proper temperature. This  will also help the pudding thicken prior to being served. Serve chilled, add a pinch of cinnamon if desired and enjoy.

HOMEMADE - VANILLA RICE PUDDING RECIPE
1 Gallon of Milk (2% or skim)
1 Cup of Sugar
1 Tablespoon of Vanilla Extract
8 oz of Arborio Rice
Dash of Cinnamon (optional)

DIRECTIONS:
  1. Pour milk into large pot and heat until simmering.
  2. Mix in sugar and stir until dissolved.
  3. Add Arborio rice and vanilla extract.
  4. Bring milk mixture back to a simmer and stir frequently.
  5. Cook for approximately 1 hour until desired consistency is reached.
  6. Pour into a shallow pan and place in the freezer to cool and thicken.
  7. Remove from freezer, mix and portion.
  8. Add a dash of cinnamon (if desired) and enjoy.
 
*Extras: Will stay in the fridge for 3-4 days if kept covered. Great for a simple homemade dessert for the family or friends.
