It is rewarding to look back over the past few months to reflect on how much I have learned, experienced, and grown in my profession. My time in the Sodexo Dietetic Internship – Allentown Campus – has provided me with a variety of exciting experiences and opportunities that I typically would not have been exposed to. Although it is hard to choose just one memorable experience, my favorite moment was when I spent a day with the wellness dietitian at the Milton Hershey School in Hershey, PA. During my time there, we spent the day making a total of 800-900 green smoothies for the students. The vegetables of choice that we introduced the children to were spinach and kale. We also educated them on the importance of trying new foods despite the way the food may look. The day was filled with much feedback and many comments. Upon seeing the green smoothies, the students made several unfavorable comments, including “Yuck,” “I won’t like that,” and “Why is the smoothie green?” However, once the students tasted the smoothies, the feedback we received included comments, such as “Yum,” “I couldn’t even taste the vegetables,” and “I want my mom to make this.”  It was rewarding to hear positive feedback on the taste of the smoothie after spending time to encourage that same hesitant child to try a sample. Most of the children were surprised with how good the smoothie tasted, as well as the fact that they could not tell that there were vegetables mixed into their drink!

Green smoothies are a great way to expose kids to vegetables, in a fun and tasty way. They are also a fun and easy way to consume a wide variety of vitamins and minerals. Try this simple recipe to introduce the children in your life to vegetables, and to pave the way for a lifestyle of healthy food choices.

Simple Green Smoothie
  • 1-2 cups milk           
  • 1 banana                                     
  • 1 cup mixed berries
  • 1 cup spinach or kale

Place all ingredients into a blender and puree until smooth.
