
Everyone is busy these days. Working in my community rotations, I stress the importance of ‘planning ahead’ time and again when discussing ways to develop healthy eating practices. Then one day I asked myself: am I doing everything I could to eat well during these busy weeks? Not exactly! So, I took a step back and recommitted to practicing what I was preaching—a simple reminder for all of us, and a good self-check from time to time.
Below is a new favorite recipe I’ve been making on Sundays for those early commutes to my rotation sites. It’s an idea I came across when planning a lesson for sixth graders about the importance of eating breakfast. I’ve adapted this recipe from a few different versions and hope this helps with your own busy morning routines. Enjoy!
Baked Oatmeal Cups
Prep time: 15 minutes
Cook time: 30 minutes
Makes 15 muffin cups
Ingredients:
2 eggs
3 1/2 cups old fashioned rolled oats
1/4 cup canola oil
1/2 cup packed brown sugar
1/2 cup unsweetened apple sauce
1 1/2 cups 1% or nonfat milk (youur choice)
2 tsp. vanilla extract
1 1/2 tbsp. ground cinnamon
2 tsp. baking powder
1/2 cup chopped walnuts (or other of your choice)
1/2 cup blueberries (or other fruit of your choice)
1/2 cup blueberries (or other of your choice)
Instructions:
Line muffin tin.
preheat oven to 350 degrees.
Mix eggs, oil, and brown sugar in a large bowl until sugar is dissolved. Add applesauce, milk, vanilla, and cinnamon. Mix until combined.
Stir in oats and baking powder. Mix in nuts and fruit until combined.
Fill the muffin tin 3/4 full with the mixture.
Bake for 30 minutes and let cool before eating.

183 calories, 7 g fat, 0.7 g sat fat, 29.2 mg cholesterol, 87.6 mg sodium, 26.5 g total carbohydrate, 2.7 g fiber, 4.6 g protein
