
Hello again! Since my last post, I have completed my food service management rotation at Loyola Marymount University (LMU) located in Los Angeles, CA. I enjoyed my time at LMU so much that I asked to stay to complete my wellness rotation there!
The team at LMU welcomed me with open arms and explained that they were interested in starting some wellness and nutrition initiatives on campus. They voiced that there were certain misconceptions among students about the foods provided on campus including nutritional value. I worked closely with the marketing, retail, and operation managers to create nutrition related materials and events to create a greater awareness of the options provided along with general nutrition information. Recently, I helped to organize a week-long tabling event where we sampled healthier combinations that could be created at the dining hall’s build-your-own stations. The event was successful and we received a lot of great feedback from the students for future wellness events.
Feeding off that event, I am now working on creating a nutrition station where students can digitally put together their meals and receive a nutritional analysis. In addition to this feature, the station will also provide tips on things such as how to create healthier meals in the dining hall and educational materials on topics such as food allergies and macronutrients. My experience at LMU thus far has been nothing but positive, and I have learned so much from the team. I’m looking forward to finishing the nutrition station and creating a launch event with hopes that my work as a dietetic intern at LMU will leave a lasting impression!
