Alejandra Bardalez - Distance Option

 Hello everyone!

My name is Alejandra and I have just finished my food service rotation at Black Knight in Jacksonville, Florida. I applied for a dietetic internship for the Fall match of 2018, and I was excited to see that I was matched to my first choice, which was Sodexo. At the beginning, I didn’t know what to expect from the internship since it was my first time, but all my fears went away after I had my orientation where I met all the distance Sodexo interns and directors, and all my questions were answered.

I was still anxious after the orientation because I had to start my first rotation, which was Food Service, and I didn’t know what to expect. I started on a Monday morning and I was greeted by amazing people there. At first, I was surprised at how small the kitchen was, and I didn’t know how they were going to be able to feed more than 2,000 people, but I was surprised of how efficient every worker was and how well they utilized the kitchen. I also got to experience an incredible team work. Everyone helps each other— the manager and supervisor included. They are always present during meal service to help whenever possible since the cafeteria at Black Knight gets very busy.

I have learned so much from my food service rotation, because I got to see that even though they struggled with a small kitchen and limited number of workers, they still managed to finish everything on time for meal service.

My next rotation will be community, and I’m excited for all the things that I have to learn.
